Westword - After a Quiet Year, Boulder's New-Brewery Scene Gets Busier

By: Jonathan Shikes

Boulder's new-brewery scene was quiet for the majority of 2016. While existing powerhouses like Avery Brewing, Twisted Pine, Boulder Beer and Upslope all made news, no new breweries opened their doors during the first eleven months of the year. The most recent had been Vision Quest Brewery, which kicked things off in east Boulder in December 2015.

The scene picked up at the end of 2016, however, with the debut of Kettle & Spoke Brewery on December 2 and Cellar West Artisan Ales a few weeks later. This year, there will be at least two more brewery openings — that of Gunbarrel Brewing, at 7088 Winchester Circle, and Beyond the Mountain Brewing, at 6035 Longbow Drive. (A plan from Upslope Brewing to open an 11,000-square-foot brewery and restaurant at 34th Street and Valmont Road has been delayed at least until 2018 and perhaps longer.)

But the pace of new brewery openings in Boulder as compared to openings in other Colorado cities is still pretty slow, especially for a town that helped define Colorado's craft-brewing scene over the past four decades.

The reason for that is "obvious," says Marie Fox, who plans to open Gunbarrel Brewing with her husband, Jamie, this spring. "The barrier to entry in Boulder is very high. Real estate is exceedingly expensive, and there is very little of it." The city requires breweries to be located in areas that are zoned for industrial uses, and there aren't many empty buildings in those areas. The Foxes searched for three years to find a big enough space that also had parking and room for an outdoor patio.

They got what they wanted, though: Gunbarrel will be in a 20,000-square-foot warehouse close to where the Foxes live, and they are putting in a 3,200-square-foot taproom with plenty of seating and games, along with a patio. The rest of the space will be reserved for a ten-barrel brewhouse and canning and bottling equipment — with lots and lots of room to grow.

"Every brewer we have ever met said, 'Space, space space — you can't have enough of it.' So we listened to them," Marie says. Jamie, who has extensive home-brewing experience and an education in Brewing Technology from the world-renowned Seibel Institute, plans to make a wide variety of beers, including barrel-aged varieties as well as sour and wild ales.

18 - Gunbarrel Brewing Company Coming to Boulder this Spring.

Boulder, Colorado: Gunbarrel Brewing Company is under construction and set to open this spring at 7088 Winchester Circle in Boulder. The Brewery is owned by Gunbarrel locals Jamie Fox and his wife Marie. The Brewery specializes in a wide variety of beer styles employing both traditional and innovative brewing techniques."We produce a rainbow of beers from deeply flavorful stouts, to our heady double IPA Dirty Habit," explains Jamie. "Queen City Saison is fermented with a very special yeast strain, unique to our brewery."

Jamie Fox is a homebrewing veteran, with an education in Brewing Technology from the world-renowned Seibel Institute. Over the course of the past 16 years, he has developed a substantial catalog of well-tested beer recipes.

To pair with the varied beer selection, Gunbarrel Brewing Company's taproom will express a laid back "come one, come all" vibe. The Brewery's spacious 3,200 sq ft taproom will feature food trucks, live performances, and beer-centric educational events. "It's time to go out in Gunbarrel," says Marie. "We are seeking to create a lively place for people to kick-back, enjoy our beer and listen to some great live music or play a game of pool or darts with friends." The inviting beer garden with festive lights strewn above community tables and cornhole sets, will also feature a grassy open space. The flexible taproom layout will play host to private events such as community gatherings, corporate events, receptions and parties.

"The taproom is such a critical part of who we are," explains Marie. "It's the heartbeat of our brewery." The couple is raising funds via an Indiegogo crowdfunding campaign in order to really bring the taproom to life. "Opening a 20,000-square foot brewery in Boulder is no small task. Our $27k goal is what we'll need to put finishing touches on our taproom and really make it special" says Jamie. In exchange for contributions, backers select from a selection of merchandise, gift cards and Mug Clubs.

Boulder Daily Camera - Veteran Boulder brewing team opening Gunbarrel tap room

January 17, 2017

By:Shay Castle

To brew a good beer, you need resources: hops, tanks, a bit of cash. You need the collective knowledge of a thousand-year-old community: the best methods, the best yeast and flavors.

And you need time.

Assuming the same three ingredients are needed for a good brewery, then Boulder County is in for something special when Gunbarrel Brewing Co. opens this spring.

Husband-and-wife team Jamie and Marie Fox are currently building out a 20,000-square-foot brewery and taproom at 7088 Winchester Circle. It's been a long time in the making, Marie said.

"We've been building this for three years. A lot of people already know about us."

Jamie, the brewer, has been testing his concoctions for 16 years among craft beer royalty as members of home brew group Hop Barley and the Alers, founded by Charlie Papazian.

Papazian also founded the Boulder-based Brewers Association and The Great American Beer Festival.

"We felt if we could satisfy these people, there would be other people who would like what we do," Marie said.

Although the brewery's operations will be self-funded by the Fox's, an Indigogo campaign is underway to help with the cost of improving the physical space.

The couple plans to fill the large space with plenty of comfortable seating, games, a gift shop and room for a band.

Gunbarrel Gazette - Gunbarrel Brewing Announces Beer Lineup, Fundraising for Spring Opening

Gunbarrel Brewing Signs Lease, Plans Opening

January 15, 2017

By: Jeffrey Steen

Though word is already out about the launch of Gunbarrel Brewing in 2017, there's more to report: The new 3,200-square-foot taproom and neighborhood gathering space will open its doors this spring with a healthy helping of beer styles, both traditional and innovative.

Among the early offerings will be a double IPA, a saison made with a unique yeast strain, several stouts, and various other styles. Jamie Fox, head brewer and co-owner of Gunbarrel Brewing, boasts 16 years of beer-making experience, which means his beers are likely to be big hits on day one.

Onsite, beer-o-philes can expect live music, food trucks, pool, darts, and an outdoor beer garden strung with lights and dotted with comfy tables and cornhole. The space will be flexible enough for a casual afternoon or evening beer, or for private parties and celebrations.

In order to make this dream a reality, Co-Owners Marie and Jamie Fox have launched an Indiegogo crowdfunding campaign with a goal of $27,000. That money will be used for finishing touches and "personalization" of the taproom. In return, contributors will receive various merchandise, gift cards, and Mug Club perks—the latter being a monthly 16oz beer for life.

Gunbarrel Brewing is located at 7088 Winchester Circle just off Lookout Road on the south side of the Gunbarrel Tech Center. For more information about the brewery, visit To contribute to the brewery's Indiegogo campaign, visit Stay tuned to GG for more information and photos as the opening nears!
